Ingredients
- 2 tbsp olive oil
- 2 medium tomatoes, diced
- 3 garlic cloves
- 1/2 tbsp turmeric
- 1tbsp mustards seeds
- 1/2 red onion, chopped
- 1/2 red capsicum, chopped
- 1/2 green capsicum, chopped
- 1 coriander bunch
- 180g king prawn, peeled
- 1 tbsp cumin powder
- 1 lemon wedge
- A pinch of ground ginger
Step 1
Get your favorite saucepan. Heat it, drizzle in some oil then toss in the mustard seeds, curry leaves, and cumin seeds. After getting fragrant, throw in the capsicum (both) and the onions.
Step 2
Let the onion turn brown and crisp. Prepare your tomatoes. Spice up the saucepan with ginger and garlic, give it a few, then put in the tomatoes.
Step 3
Let them sizzle to a saucy paste for 3-4 mins then add 150 ml of water. Bring to boil.
Step 4
Add in turmeric to color up, then add the prawns. Simmer for 3-5 minutes till they are well done. Give it a taste, and add to the salt and pepper if need be. Add in the coriander then let it simmer for another minute.
Step 5
You can serve when wet with steamed rice or pasta. Use the lemon wedges as the prawns could use a squeeze.
